Wayne & Nancy@seattlehanddoc As someone who works from home, I love making myself something quick and easy, but also fantastic for lunch. This is one of the BEST things I’ve discovered in a long time. @feelgoodfoodie fried cubed feta in cornstarch—that’s literally it—and you get the most unbelievable crispy, crunchy exterior. I made it for lunch with a Greek salad and it was absolute heaven! CRISPY FETA GREEK SALAD SALAD • Cucumber, chopped • Tomatoes, chopped • Red onion, chopped • Kalamata olives • Salt + black pepper • Dried oregano • Red wine vinegar • Olive oil @partannafoods CRISPY FETA • Feta cheese, cut into cubes • Cornstarch • Olive oil, for frying PLUS • Pita bread, cut into small triangles Toss the salad ingredients together. I like equal parts red wine vinegar and olive oil, but add both to your liking. Toss the feta cubes in cornstarch, shake off the excess, then fry in hot olive oil until golden and crispy on all sides. Pile the hot crispy feta over the salad and EAT! *BONUS: After removing the feta, I threw small pita triangles right into the leftover oil and fried them until golden and crispy. Absolutely delicious for scooping up the salad—and not a drop of that feta-infused oil goes to waste! #greeksalad #friedcheese #quickrecipes #salad #wfh @hexclad @victorinoxnorthamerica @surlatable

@summercolleen75 Made this today and my feta just melted into a big goop! I had to flip like a pancake and cut up. The flavor was there and these are regular flavors I love, but I envy how your feta stayed into squares!
