Save this! Recipe down below 👇🏾: I have been making this cheesecake every winter for the last 3 years and it never fails 🙂 Strawberry compote is optional! Ingredients: Make sure all ingredients are at room temperature before starting! For the Graham Cracker Crust: * 1¼ cups graham cracker crumbs * 4 tbsp granulated sugar * 5 tbsp melted butter For the Cheesecake Filling: * 40 oz cream cheese, room temperature (4 - 5 packets of cream cheese) * 1¼ cups granulated sugar * ½ cup sour cream, room temperature * 2 tsp vanilla extract * 4 large eggs, room temperature For the Strawberry Compote (Optional): * 2 cups fresh or frozen strawberries, hulled & halved * ¼ cup granulated sugar * 1 tbsp lemon juice * 1 tsp vanilla extract (optional) Instructions: 1. Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and butter. Press into a 9-inch springform pan and bake for 7 minutes. Reduce oven to 325°F. 2. Beat cream cheese until smooth. Mix in sugar, sour cream, and vanilla. Add eggs one at a time, or whisk them together first (like I did in the video) and slowly mix them in. Tap the bowl on the counter to release air bubbles. @iamkeia 3. Pour filling into the crust. Bake at 325°F for 30 minutes, then reduce to 250°F and bake 45 minutes more. Turn the oven off and leave the cheesecake inside for 30 minutes, then crack the oven door (using a wooden spoon works great) and let it cool for 1 hour. 4. Let the cheesecake come to room temperature (about 3–4 hours), then cover and refrigerate until fully chilled. 5. For the compote: Combine strawberries, sugar, and lemon juice in a saucepan over medium heat. Cook 10–15 minutes, stirring occasionally, until thickened. Stir in vanilla at the end if using. Cool completely. 6. Spoon the cooled strawberry compote over each slice before serving. Enjoy! 🍓🍰 #foodporn
