Sweet potatoes are one of my favorite summer crops because they LOVE the heat! They generally need about 90–120 days to mature and grow best during a long stretch of warm weather, especially when daytime temps are around 75°F and above. That makes them a great summer crop, particularly in the South. But here’s something a lot of people don’t know: the sweet potato itself isn’t the only edible part of the plant. You can eat the leaves and tender stems too! Sweet potato leaves are nutrient-dense and provide vitamins C and K, folate, potassium, calcium, iron, fiber and beneficial plant compounds. You can sauté, steam or boil them, or add them to soups and stir-fries. The roots are nutrient-dense too. Orange-fleshed sweet potatoes are especially rich in beta-carotene, which the body can convert to vitamin A, along with fiber, vitamin C and potassium. One important distinction: sweet potatoes are NOT the same as regular white/Irish potatoes. Sweet potatoes are in the morning glory family, while regular potatoes are in the nightshade family. ⚠️ Do NOT eat regular potato leaves or stems. They contain toxic glycoalkaloids and should not be consumed. So while you’re waiting for your sweet potatoes to develop underground, you can harvest some of those edible greens too. Just don’t remove too much foliage at once because the plant still needs those leaves to keep growing. #SweetPotatoes #GrowYourOwnFood #VegetableGardening #EdibleGarden #SummerGarden

@jonyangel74 👏Wow - a master gardener/👏👏/ 🙌/ did u get to find out- that since Kemet invented the agricultural tools & had the best ever _ that since theirs was nationally proprietary- ( no outside nations ) , they - their descendants- later on were forced into agricultural slavery …? A Royal nation of priests reduced to being another continent’s agricultural slaves …maybe Thats why now there are trade agreements/ But there shouldn’t be -) their enemy dug up pyramids & fafo… They just can’t copy from Kemet w/out permission & get away with it & then use it against the melanated ? 👏 Hotep

@taulican.dreams I tried to eat the leaves after sautéing them like I do spinach and they were really tough to chew. I think you have to cook them like collard greens and let ‘em cook a little longer.

@authenticallyalex I haven’t had luck producing my own slips and I haven’t found any slips for sale locally. I’ve only tried producing them in water. I’ll try the soil and see how that works. I’m in coastal South Carolina near Savannah, it’s still hot, so maybe it isn’t too late to try to grow.
