So when I spotted these Thai Turkey Meatballs with Coconut Curry in @rachlmansfield’s new cookbook, More, Please!, I knew exactly what I was making for dinner tonight. Rachel is the queen of quick and easy recipes, and her new book is filled with plenty more delicious, approachable meals to add to your rotation. I decided to sear the meatballs instead of baking them, then built the coconut curry right in all those flavorful drippings before letting the meatballs finish cooking in the sauce. I made a batch of basmati rice, fluffed it with a little butter, then spooned that gorgeous curry sauce right over the top with plenty of cilantro and a generous squeeze of lime.
