noma@nomacph Last Friday we served “guests” for the first time, the first time tasting the menu. This was an opportunity for us to try the menu in its entirety, for us to think about what cutlery works, what wine works, the timing in-between servings, was it surprising and how full were they? The final menu tasting is always nerve-wracking and rewarding… Is it good enough? What can we do better? Are they going to smile, going to laugh? The “guests” left happy, we learnt lessons… and in the words of our Head of the Test Kitchen, @mette_soberg: “We can’t wait to serve it.”
