25-30 seconds is in almost every espresso post you see on social media. It’s also incomplete to the point of being misleading. Your grind, your tamp, your beans, your water temperature — all of it affects extraction time. A shot that tastes incredible at 22 seconds is a good shot. One that hits 30 seconds exactly and tastes like battery acid is a bad shot. The number doesn’t drink the coffee. You do. The 25-30 second range is a starting reference, not a law. It tells you roughly where to look, not when to stop. Watch the color instead. Dark drips, honey stream, pale means stop. That transition adjusts automatically for every variable you throw at it.
