About Muttonkorma
Mutton Korma is a rich South Asian curry where tender mutton is slow-cooked in a spiced yogurt and nut-based gravy. The dish is popular for festivals like Eid and dinner gatherings, often served with naan or rice. The core method involves marinating mutton with yogurt, ginger-garlic paste, and spices, then cooking it with fried onions, whole spices, and a cashew-almond paste for a creamy texture.
The recipe starts with marinating 1 kg mutton in yogurt, ginger-garlic paste, salt, turmeric, coriander powder, and red chilli powder for at least an hour. Whole spices like cardamom, cinnamon, cloves, and bay leaves are sautéed in ghee or oil before adding the marinated mutton. A paste of fried onions, cashews, and almonds blended with milk or cream is stirred in to create the signature thick gravy, then the meat is simmered on low heat until tender.
Variations include Shahi Mutton Korma which uses extra nuts, kewra water, and rose water for a royal flavor, and Safed Korma which skips red chilli for a white, milder gravy made with poppy seeds and khoya. Garnishing with fresh coriander, mint, or julienned ginger completes the dish.
