About Kefta
kefta is a spiced ground meat dish common in Middle Eastern and North African cooking. It’s usually made with beef or lamb mixed with onion, parsley, and spices like cumin, paprika, and cinnamon, then shaped into patties or skewers and grilled or baked.
Variations are regional. Lebanese kefta uses a 50/50 lamb and beef mix with parsley and is often served in flatbread with tabbouleh. Turkish versions add bell pepper and tomato paste, while Egyptian kofta includes flour, cornstarch, and baking powder for texture.
A popular modern take is sheet pan chicken kefta wraps with yogurt sauce, featured by creators like Ben Chelin. It’s also served in tagines with eggs and tomato sauce, and debated online as “kefta vs kofta” depending on dialect.
