We had an amazing dinner at Alaia, @ritzcarltonoahuturtlebay’s signature restaurant. Chef David Fernandez shared some new as well as classic dishes: • Hamachi sashimi - Lilikol Leche de Tigre, Red Onion, Sweet Potato, Jalapeño, Spiced Macadamia Nuts • Sake steamed clams - Garlic Butter, Fresno Chiles, Crostini • Kaffir lime tomato gazpacho - Watermelon, Avocado, Cucumber, Mint • Grilled octopus - Saffron Aioli, Marble Potatoes, Crispy Ogo • Huli Huli secreto iberico pork - Sweet Potato Puree, Hawaii Pineapple, Broccolini Natural Jus • NY beef strip loin - 12 oz Prime Beef NY Steak, Smoked Whipped Potato, Crispy Onion Rings, Sugar Snap Peas, Truffle Jus • Kahuku corn tagliatelle (I added shrimp) - Corn Cream Sauce. Charred Corn, Lime, Ali Mushroom, Kukui Nuts, Sweet Land Farm Goat’s Milk Tomme Cheese • Catch of the day - Chorizo Iberico, Sauteed Red Peppers, Asparagus, Confit Cipollini, Creamy Lobster Bisque • Kahuku cream corn - Applewood Smoked Bacon, Chipotle, Cilantro, Furikake • Pistachio tres leches • Coconut cake • Vegan black sesame “panna cotta” Really outstanding! Chef David is from Spain, so he uses that perspective while working with local ingredients. I loved my corn tagliatelle, but I couldn’t resist filling up on the appetizers!
