🌽 The reason corn didn’t doom entire civilizations to malnutrition? A pot of water, a handful of lime, and thousands of years of culinary knowledge. Nixtamalization is the ancient Mesoamerican process behind every great tortilla, tamal, and bowl of pozole. Dried corn is cooked and soaked in an alkaline solution made with water and lime (cal), and that’s where the transformation begins. The tough outer hull loosens. Proteins soften. Starch gelatinizes. The pH rises, calcium becomes more available, and niacin, a vital nutrient, is unlocked. Long before anyone understood the chemistry, Mesoamerican cultures had already discovered a process that made corn more nutritious, more flavorful, and easier to turn into masa. That’s the difference between corn and masa. Every tortilla carries the wisdom of fire, water, and lime. The basic process → Rinse dry corn → Simmer with 1–2% lime by weight (20–45 minutes) → Soak overnight (8–14 hours) → Rinse until the water runs clear → Grind into fresh masa One of the most important culinary techniques in history, and it’s still used every day. @_.yazminp Do you need to have patience because that takes time, the masa-based has its own trick you need to mix it very well to have a good texture, you can add some chicken broth to the masa-based the taste of the tortilla will be more delicious.
